A couple of years ago we had a girls’ night in. The theme was tea party. We all baked some goodies for the event and one of my offerings was these little treats. I had received The Hummingbird Bakery cookbook as a gift and was keen to try out as many of the recipes as possible. These were immediately appealing with their gooey chocolate brownie base, smooth cheesecake middle and light and sweet creamy raspberry topping. They went down a treat. Not only with the girls, but with one of Sasa’s cats…who when our backs were turned licked off the pink topping…thankfully I’d made enough for all of us.
